Here are some of my must haves in no particular order:
very sharp knives (they can be expensive, but make life so much easier)
george foreman grill (may be the single greatest invention ever)
measuring cup (I'm very precise with measuring ingredients I add)
microwave (I cook all of my broccoli in the microwave)
good, heavy pots and pans (expensive, but worth it)
shaker
blender
food processor

Tupperware, blender, measuring cups, very sharp knives, steamer, refillable oil sprayers.
As far as cookware, I have to say that it is a very good idea to invest in high quality!!! Every single time I went cheap the coating chips off early on. You do not want those chips inside your body! I sucked it up and bought Calphalon and comparably high quality cookware.

The Glad reusable Tupperware containers, my George Foreman-like grill, measuring cups & spoons, shaker bottles (LOTS of em, I make sure or order more than $75 on bb.com every time so I can get another one! lol), good knives, zip-lock baggies, microwave. Gee, I'm sure I'm forgetting something... oh well.

Everyday without fail:
My not-a George Foreman grill
Blender
Small plastic containers (varying sizes) and zip baggies
Small chilli bin (I think in the USA they are called Eskis??)
2L Bottle that I fill with water each day so I know I've had my quota
Freezer! I tend to buy in moderate bulk and then baggy up individual servings to make cooking/planning easier.
I also make a point of using appropriate sized plates and utensils that are nice to eat with.

my hand blander/whisk chopper get's used almost every day. Most often for chopping nuts, or liquidising indredients.
the microwave is indispensable for heating veggies, otherwise I'd have to drag out the steamer basket every time
and I freeze a lot of stuff because I shop once a month. I can't handle supermarkets anymore online grocery shopping FTW!

If you buy a nonstick cookware you can not use metal utensils. You must use plastic or wooden. The metal scratches up the nonstick...then you eat it. Also, if you put your nonstick cookware in the dishwasher it greatly reduces the life of your pot or pan, even if its a high quality brand.
Also if you are looking for an amazing knife go to macys. Cuisinart makes a santu knife that is super cheap. Its only about ten dollars. It is the best knife ever! It cuts everything like butter!!!

I need to invest in quality knives. I avoided fruits and veggies for years, and find it easier to eat both when they're cut in smaller portions or sliced, so I'll be doing lots of that. I'm pretty sure it's just a mind thing. lol
