Although, I generally just take a noodle or two and run under cool water so as not to burn my mouth, and just sample it to see if it's done to my liking.

Just cook it till it's done. I doubt very much it will be more than 12 minutes. Take a little out and test after a few mins keep testing.

Just taste a piece and test it. Undercook it just a little bit, strain it and keep a little of the water, heat some sauce in a pan, and then finish the pasta with the sauce in the pan. Add the pasta water if it gets too thick. This is the best way to do it.
