I think I know why my squat has stalled..

And I think it's because my hamstrings aren't being hit hard enough

For legs, I rely almost entirely on compound exercises (squat, lunges, deadlift) because I've had bad injury experiences with machines.

What are some of the best free-weight exercises for hamstrings, if there are any?

Stiff legged db deadlifts annihilate hamstrings. Make sure you're touching the db to your foot each rep.
Though, for hamstrings, I'd use a leg curl machine after some stiff legged deadlifts.

SLDL for the win, keep legs together and just slightly bend your knees, kinda like you are stretching your hamstrings. But however I will say, going to your feet is not necessary and actually can cause injury... your shin should be good, or when you feel that stretch.

For me the stretch is when I go to my toes, but you're right, go to where it's comfortable.

Is it important that I use DUMBBELL stiff-legged or does it not matter if its with a barbell?

I would use a barbell because i think that it is easier and will help you hold more weight

SLDL is pretty much is what an RDL (Romanian Deadlift) is. And a very good lift.

There's only one thing that I feel hits my hamstrings harder: back extensions. I just grab a 45 plate, and do about 15 reps on extension thing, and afterwards my glutes and hammies are on fire. If you don't understand, just look at http://www.mothernature.com/images/l...ond/Back-8.GIF.

You don't need bother with hamstring curls.

I feel that the form is better with dbs, and the range of motion is better... or at least it feels like it flows well.
