A couple of comments:
I think u r right, ur vacation diet needs some more cals, or r u leaving space 4 the occasional bit of junk food?
Ur diet plan seems 2 rely on chicken breast a lot 4 protein, nothing wrong w/ that, but doesn't it get old? I'd stick in some lean red meat once in a while & some other kinds of canned fish, low-fat cheeses, beans & rice, things like that 4 variety.
