i dont think toasting food changes the GI, i mean, the bread (assuming you are going to toast bread) has already been cooked in extreme heat already, so i dont think toasting it would raise the GI very much if at all.
boiling i thought raises the GI? at least i thought that if you boiled pasta longer that the GI goes up.
i would just stick to eating your veggies raw

when you cook/boil/toast veggies they can lose quite a bit of the vitamins and minerals
