toast,boil,bake,ect.

can somebody please tell me if i'm losing it or not.

i heard that if you boil stuff (carrots,potatoes,corn,rice) it lowers the gi. is this true ?

i also heard that baking and taosting stuff (bread,potatoes,oatmeal) raises the gi. is this true ?

i'm just curious, eaither way, i eat the stuff raw, because it fills me up more.

i dont think toasting food changes the GI, i mean, the bread (assuming you are going to toast bread) has already been cooked in extreme heat already, so i dont think toasting it would raise the GI very much if at all.

boiling i thought raises the GI? at least i thought that if you boiled pasta longer that the GI goes up.

i would just stick to eating your veggies raw when you cook/boil/toast veggies they can lose quite a bit of the vitamins and minerals
