Imo Yates or Arnold
Greatest bodybuilder to me not only means who looked good but also other areas such as contribution to training, determination, conditioning, etc.
Arnold takes the cake in influence, he prolly has had more influence then every other Mr Olympia combined. I like Yates because he revolutionized training, brought the low carb diet more mainstream, achieved the best conditioning of any Mr Olympia, and trained hard all year round while improving year after year.
People can say Wheeler or Olivia, and while I could agree somewhat they may have had the best genetics and physiques for there time, Id never categorize them as the best mostly because they didnt train very hard and had less then steller diets.

Probably Kevin Levrone and Steve Reeves.
Amazing how Levrone has shrunk though. Respect to him for respecting his health enough to drop the aas though.
But I think that Dwayne Johnson (The Rock) has an awesome physique, even though he isn't considered a "bodybuilder". He obviously built his physique with hard work though. And chemicals too I would think.

Greatest in regards to physique - Coleman.
Personally I think Flex's physique is the closest thing we have seen to perfection, but even at his best, Coleman shuts him down.

my favorite ever is Kevin Levrone...so it's hard for me to think who was the best ever without automatically thinking Levrone.
but I'd have to say Coleman, I guess. At his best, he was amazing. Maybe Dorian. but probably Coleman.
