Strong chest, but no chest separation or bulk, how/why?

At 5'11 180, I'd save I have above average strength.

I can bench 320 for 1, 225 for 15, etc.
I dumbell incline the 95's 3*8
I decline the same as my bench

I do flies, chest isolation machines, etc.

I just don't understand why my chest looks so small. If you looked at me with my shirt off, you'd never imagine I can lift any of those. I just don't have much mass...and because of that, no separation.

My diet is fine. I get my bodyweight in protein, around 3200-3500 calories/day, I don't eat ****ty food unless it's a cheat meal.

What are my options?

I've tried doing all dumbbells, that didn't work either.

Up the volume, take less time in between sets, and/or try higer reps. You could also try adding 500/cal a day. Back when i used to train for strength I got my max to around 315. But, like you, if you saw me with my shirt off you would laugh if told you that i could max out at that weight. Now, I could care less how much I bench since my focus is to put on muscle. I got on a more bodybuilding oriented split and now my chest is lightyears ahead of where it was back then. However, I'm not as strong as I used to be.

What is your typical workout routine for your chest?
