a 2nd bulk question & b.f. guess

well i put on some remarks about bulking a few days ago. im trying to bulk at 2100-2500 cals. im taking creatine, my weight started at 127, its been a little over 2 weeks, im about 131 now. can this be all due to water weight or should i be excited about muscle mass cause i know that takes a while! im not doing much cardio except maybe one ortwo days but starting the 25th ill be running every morning because i have to for the army. but i feel stronger lifting even within this short two week time. i know im gonna have to bulk longer to see significant gains but should i just stick to a 2500 cal mark when i start running everyday. my daily diet is like this..

(i have to guesstimate cals, im pretty good at it by now..i used to weigh everything)
breakfast-scrambled eggs w/salsa,2 slices wheat bread, oatmeal, about 2 tblspn of pb (not natural cause its not available)..occasional fruit
lunch-3 slices of deli turkey with baby spinach leaves, olive oil,occasional fruit, cottage cheese sometimes w/pb or mix nuts
dinner-usually same as lunch, sometimes fish instead of turkey
snacks-i will have 2 meal replacement as my pwo meal, 440 cals,60g protein, 50carbs,6g fat..(its the best i can do)
sometimes ill have a protein bar/meal bar if i didnt reach my cals for the day and i get the chance or another meal replacement or a pb sandwhich or peanuts.
typically i am about 2100-2600 cals, 190-250g carbs, 50-100g fat, 130-210g protein (all depends on the day)

im doing a workout as follows..
day 1-bis/back,forearms
day 2-tris/chest,shoulders
day 3-legs
repeat for day 4-6
day 7-rest
mix in abs and occasionally cardio (trying to minimize it due to bulking and i will be running ALOT very soon)
i do about 2-4 exercises per body part, 5-8 reps at heavy weight for 4-5 sets. my rests are from 1-2 minutes and i work out about 40-70 minutes depending on the time available and workout.
im worried because i dont typically feel sore after my workouts, sometimes i do..yet im lifting heavy & hard. i sometimes even manage to need a spotter on my last rep.so i know im lifting heavy..but im limited to a 45lb bar with plates, usually no dumbbells, and a couple other random bars which idk how heavy they are.

i really want to compete come about 2 years from now, any input on getting there.im 100% motivated and once i get out of my army training i can fully focus on my diet which i know needs work but is it doable to gain good muscle? i want to try to get to 135 but i dont want to gain too fast.once i start running itll get harder.

also any body fat guesses and body type guesses, i feel like im a mesomorph but idk, any recommendations specific to body type.

thanks in advance, ps. any input is great, it gives me something to do..i cant get online much so i live for the forums when i can, and have to read the same muscle mags over and over ha..but thanks

in addition i havent had a period for a year.the doc here seemed not to be worried and put me on a hormone for a week but so far gave me no period.but i am active , so she thinks thats why plus i lost 20 lbs nov08 to march 09 gained 12 & lost 5 from july 09 to sept 09 now im gaining for mass..my metabolism is all crazy,most days i can eat forever and i feel like its for a 140lb female which is what i was a year ago.can this be affecting things..was or is my body in some sort of starvation. or is my period messing my metabolism or is my weight change messing me up. thanks again
