I sometimes cook my spaghetti squash in the microwave. Pierce some holes w/a fork (or it will explode!), put it on a plate and about 15-20 min (google it) in the microwave. I've also baked my squash. Cut it in half, take out the seeds/stringy stuff, put it face up or down on a baking sheet and bake about 45 min to 1 hour. Let it cool and spoon all the innards out. They should be fairly soft, but with some texture. Here are some recipes using spaghetti squash. Its really good w/some veggie or regular chili on top!

Tonight's dinner.....and yes, I eat the whole thing, and am STILL hungry afterwards.....
Tuna with onion, pumpkin, green beans and whole wheat pasta with extra virgin oilive oil added when I have almost finished my plate.... YUMMO!

Just had whole wheat toast with natty pb, 1/2 a bananna and turkey bacon on top. Believe it or not, it was awesome!! Just enough salty, sweet, etc.
Lunch is salad w/ grilled chicken and sweet potato. Can't wait!

just saw a recipe for spaghetti squash
it said microwave is the easiest and to pierce a knife into in like 8 times so the steam can get out and its 4mintues to each lb. so 3 lb squash it would be 12 minutes in the microwave.
let it cool for 10 minutes and than take out seeds and start "forking" the squash meat and that becomes the spaghetti, i cant wait to try it one day!
Im still thinking of those protein pancakes! too scared to try it really but willing to do!

Question: How many calories per day are all of you ladies eating? I am looking at your meals and thinking that you gals are eating way more than I am and right now I am feeling starved! I keep trying to keep my carbs at 100g a day and I thought this was high but my meals are looking plain compared to these gooey goodies!

I do have some really fantastic recipes that are still quite clean - my digital camera needs it's electronic battery replaced, hense, no photos yet. Here are some favorites (note: I like to make diet things taste really good and decadent)
Vegetable skillet
Load of skinny asparagus (cut into pieces)
Bunch of green snap beans or snow peas etc (Cut into 3rds)
Mushroom (Sliced
Sweet Red/or yellow pepper (Cut into pieces)
Zuchini (Cut into pieces)
1 Tbsp of Virgin Coconut oil
1 Tbsp of Almond Butter (or 1/4cup of pine-nuts or cashews instead)
Heat coconut oil, add veggies, stirfry on high heat until asaparagus turns darker green, add almond butter and about a Tsp of water, mix, add seasoning of your choice, stirfry for a couple more minutes and enjoy (veg should be el dente) Makes about 4 -5 good sized servings! Often, to make a meal of it, I add pulled, roasted chicken breast and/or egg white. Yummy!
And my favorite (made it last night and having left overs tonight!)
Light Tortilla Soup! Freakin' Awesome!
2 - 4 good sized baked/grilled chicken breast without skin or bone. Pull the chicken Mexican style (shredding with fingers) and set aside.
Chop 1 onion, garlic to taste, celery, and fresh cilantro. Add to heated skillet or saute pan with about 1 Tbsp of Olive oil. Brown. Add 1 can of sweet kernal corn and 1 large handful of (baked) corn tortilla chips, hand crushed into pieces. TRUST ME! continue to stir fry and add about 1tsp of cumin, 1 tsp of paprika, cayenne (to your taste) and chili powder (to your taste). Fry and set aside.
Take 1 large carton of fat free chicken stock (900ml) or 1 1/2 cartons (depending on how many serving you want) and add 1 large can (540ml or more) of crushed or stewed tomatoes. Bring to simmer in large soup pot. Add chicken, add pan of pre-fried veggies. Simmer and add more seasoing to your liking. Now, here's the kicker, add the juice of 1 squeezed lime to to the stock. After it has been simmering for atleast 30 mins, serve in large soup/stew bowls (Should be chunky like a stew) and top with more crumbled baked tortilla chips, a good pinch of mozzarella/chedder shreds, a pinch of chooped cilantro, 1/4 sliced avacado and a dollop of light sour cream or plain yogurt, Stir a wee bit and enjoy!
Makes alot! And freezes really well. This is one of those dishes that tastes even better the next day. Adjust the seasoning and tortilla chip content to your liking.

Home made sweet potato fries (seasoned with thyme, basil, garlic powder, salt and a touch of olive oil)
Half a chicken breast and a little bit of lean white pork cut from a roast.
YUM!
I usually just eat chicken breast blandly every day, but I really enjoyed the change.

Greek Yogurt Amazingness
I'm sure we have all tried finding substitutes for pretty much every fattening food out there...
Seen a few posts with greek yogurt.
Typically I prepare it as so:
1 cup greek yogurt
1-2 tbls cinnamon (yes I love the spice)
few packets of stevia or splenda
1 tbls almond butter
few blueberries
there you have it. Pretty much the most amazing thing in the entire world. Almost feels like you are eating frozen yogurt

4 uncooked eggwhites
Mix in 1tsp of cinnamon
1tbsp splenda sugar
Until frothy
Cook, let cook slightly.
Take out a low calorie whole wheat wrap and smother 1tbsp of peanut butter.
Add the eggs, wrap, and enjoy.
Oh, My, gosh! The taste is wonderful.
