Dairy and fruit are fine, just be sure to factor them into your intake for the day and they are as good as any other source of calories. I would opt for fat-free on all your dairy products, to save calories - your diet will leave you hungry sometimes, and you will want as much food as you can.
Most winning competitors will tell you there should be no cheat meals on a precontest diet. This does not mean you are restricted just to the foods on your list for 8 weeks, but rather if you eat something unhealthy, fit it into your macros for the day by adjusting all your other meals.
