Manliest Meatloaf on Earth.
Came up with the recipe myself. It definitely helps add muscle while tasting great. I hope you enjoy.
Ingredients-
2 pounds lean ground beef
1 pound bacon
1 egg
1/2 cup dry oats
2-3 cups mozzarella cheese
1 cup cheddar cheese
half an onion finely chopped
1/4 green bell pepper finely chopped
1/4 red bell pepper finely chopped
1 tbs Sweet Baby Rays steak sauce
Butter/margarine
salt and pepper (to taste. you dont need much)
garlic salt
italian seasoning (if you have any. its not required, just adds a nice flavor).
Supplies-
One large bowl
A large baking dish (about 12x12 or so, depending on how thick you want it)
Prep-
In a medium sauce pan, melt the butter and throw in the peppers and onion. Keep on medium and stir every couple minutes, until the onions start to caramelize. Turn off the heat and just put the pan to the side. You will come back to it shortly.
Next, grab a large bowl. Put in the oats, the egg, the Sweet Baby Rays, the seasoning, the cheddar, and only half the mozzarella cheese. Open your package of bacon and cut it in half. Put half to the side, you will come back to it later. With the remaining half, cut it up into small pieces... maybe about the size of a quarter. Drop all the pieces of bacon in the bowl.
Next, grab your sauteed veggies and dump them in the bowl as well. At this point, everything but the ground beef, half of your bacon, and half of your cheese should be in the bowl. Mix everything up well, making sure your egg gets beat fairly well. You should have a bowl of something resembling cheesy salsa kind of. That is perfect. Once everything is mixed well, add in the ground beef and mix everything together for a couple minutes (until all the ingredients are mixed in with the beef).
Grab your baking dish (make sure to spray it with Pam or something). Dump in your meatloaf and press it flat. Make sure it is even and takes up the entire dish. Now, grab the rest of your bacon and layer the top of your meatloaf with it. Depending on the size of your dish, you should be able to get 2 or 3 rows of bacon. Once that is done, get the rest of your mozzarella cheese and sprinkle it on the top of your bacon. Get your italian seasoning (if you have it) and sprinkle it on top of the cheese.
Put on your lid and set in the oven at 350* Fahrenheit for about 40 minutes. After forty minutes, pull it out and check the internal temperature with a thermometer. You should be somewhere around 150*. Being very careful, dump out the grease thats in the meatloaf pan into an old can or something. Keep the lid off and put the loaf back in the oven but TURN THE OVEN ON BROIL. Keep an eye on it. the point of it being on broil makes the bacon crispy and turns the cheese golden. You should only need it in there for 2 or 3 minutes.
Pull the loaf out, let it cool and enjoy! Once you make it once, its pretty easy to do it again. You can play with your own ingredients, i just found this to be an amazing tasting loaf. Enjoy.

I actually meant the flavor wouldn't come through that much but looking at the ingredients again, it would probably add a nice flavor layer. But still...you could get that without a pound of bacon and make it a lot easier to fit into your diet.

I thought meat loaf was mostly bread/grain + meat. What's with all the cheese and lack of carbs?

Not to my knowledge. I'm pretty sure it's called meatloaf because it's usually meat that's baked in a loaf pan and it's a loaf shape. My mom's meatloaf only contains bread crumbs for consistency and to keep everything stuck together real nice.

I find it a bit ironic that the recipe calls for both 2 lbs of lean ground beef and 1 lb of bacon.
