Chicken!
How do you cook your chicken?
I'm looking for fast new ways...I'm so tired of doing it in a pan with seasonings.
And does anyone else find the taste of plain chicken nasty!?

are you using water in the pan?
i chop my chicken up, add some seasoning mix and salt, cook it in hot water till most of the water is boiled off, and near the end toss in a couple chopped up onions..leaves it super tender so i could cut it with a chop stick

I love chicken..!
I mostly steam EVERYTHING I eat.. but now and again I'll cut it into strips and throw it under the grill with some lazy red chilli's and garlic. YUM!

Usually get a pound, add some seasoning, Emeralds essence, and bake on 350 until cooked in the oven. And then can fridge it and have for a few days, usually last about 2-3 days. Usually add peppers, onions and garlic. Just heat it up and toss it on some rice and its a good healthy meal.

I hardly ever eat it anymore, because I don't like it either. Here's my favorite recipe though, courtesy of Rachael Ray.
Season with salt and pepper and saute in a pan with a little oil. Remove the chicken, and then deglaze the pan with water and balsalmic vinegar. Whisk in a spoon of tomato paste and some sour cream and keep whisking until sauce thickens to desired consistency. Slice chicken and pour the sauce over. It's really tasty!

I cook mine with my George Foreman Grill! I pretty much use that to cook all my meat. I'll sprinkle my chicken with Garlic Powder or Curry Powder or italian seasonings...or you can marinade it in whatever. Then I just throw it on the grill for a few minutes and voila!

Make Chicken Salad!!
I'll grill it with some McCormick Montreal Chicken seasoning. Then, I let it cool, cut it up in pieces, add 1/2 cup Veganaise (it's like mayo, except it's made from grape seed oil - extremely healthy and tastes awesome), 1/2 tsp. celery seed, fresh ground pepper, 2 Tablespoons honey mustard. Mix all together and you have a really delicious chicken salad. I top it with some walnuts and I add a small handful of grapes, quartered. Then I put it on a bed of fresh greens and slice some tomatoes. Had it for lunch today...YUM!

Grilled Chicken is so easy, and it's really convenient for me too because as long as we have a full tank the husband does all the grilling! Yay! Right now we need a refill, so we have been putting the George Foreman grill to work. It's also very quick and easy, but I have to do the cooking (pouts)
I like to rub paprika, and curry on the chicken before cooking, or sometimes cajun seasoning. I also always have a bottle of Franks Buffalo sauce on hand for some extra flavor.

I wish I could grill all the time! I liVe in NYC and I have a little charcoal grill bolted to my fire escape (super illegal)...it takes so long to get going, and I have to sit on the fire escape the entire time to prevent any issues! Soooo grilling doesn't happen too often. I'll keep tryin with chicken.

You could get a countertop grill like the George Foreman, and could use it anytime. It makes cooking a breeze. Everything cooks in much less time too. For example hamburgers cook in 5 minutes or so. They come in a few different sizes depending on your needs too. We got our off ebay, and love it. Ours is large enough to cook even the largest steak cuts on.

Drunken Mustard Chicken
This is from a Muscle and Fitness Magazine from 2004 (the alcohol burns off during cooking). It takes about five minutes of prep
3/4 Cup Dijon or deli mustard
1/4 Cup extra virgin olive oil
salt and pepper to taste
6 chicken breasts (6-8 oz each)
1 1/2 Cups dry white wine
1.Mix mustard, olive oil, salt and pepper in resealable bag than add chicken. 2.Marinate for 5 or more hours or overnight. (I set this up the night before so i just need to take it out the next day)
3. Preheat oven to 400
4. Put chicken in baking dish and pour marinade over it
5. Add white wine
6. Cover with aluminum foil and bake for @ 30 minutes
Nutrition
approximately 250 cal, 46g protein, 1g carbs, 6g fat

Bring a pot of water/chicken stock/water and a can of light coconut milk, to the boil. Pop in your chicken breasts (as many as will fit under the water), put the lid on, take it off the heat and 15 mins later you have the most beautiful, melt in the mouth chicken.

One of my favorite ways to eat chicken is sear in a pan with olive oil, fresh minced garlic and chopped shallots--add in a some splashes of red wine and rosemary and finish baking off in the oven. Wonderful!

Two different ways...
Put chicken, 1/4 cup balsamic vinegar, and 1 Tablespoon olive oil in a bag. Let marinade for a while...even over night! Grill on BBQ or put on a cookie sheet and cook at 350 for about 20-30 minutes (depending on thickness of chicken). Just before it is done, put tomato slice and fresh basil on top and let the heat of the oven shrivel it all up! I also put motzarela on my husband's chicken...he LOVES it!

I take one jalapeno cheese roll (not healthy, but you eat so little of it with each serving!) and I put it in the blender or the magic bullet to make bread crumbs.
I use about 1 1/2 to 2 pounds of chicken for this. I love left overs! I fillet my chicken so that it is thin. I dip the chicken in egg white and then in the bread crumbs. Then, I put them in a preheated pan with a tiny bit of olive oil. If you have a good non-stick pan, that works without the butter! Cook about 3-4 minutes per side (depending on how thick the chicken is!). You can do this with regular bread crumbs, but the jalapeno ones add a little kick! The egg whites seal in the moisture and make it really yummy!

chicken
after competing this past march and eating chicken twice daily, everyday, I got sick of the taste as well. I have found a seasoning that i can put onto chicken that makes the taste tolerable. Mrs. Dash's Rotesseri chicken seasoning. just sprinkle the preferred amount over the chicken and either bake it in the oven, or grill it on the foreman.
