DB rows allow for a better contraction at the top meaning the middle of the back will get hit hard at the top of the movement.

exactly, DB rows done with both arms at the same time,...I like to specify now since when I say "DB rows" most people think I mean the one-arm variation, lol.
Anyways, T-bar Rows are great for overall back thickness as well but I feel emphasize the middle back muscles more than normal BB rows do, so that's another exercise to use.
As well you can finish up your routine with seated cable rows with either the V-handle (not the triangle, the V that you put one hand on each side of) or with the D-handle attachment.

When I do rack deads, I am generally sore from my lower back all the way up to my traps.

Out of neccesity I do T bar rows but with a DB. They are one of my favorite lifts, and due to the smaller size of the actual weight you can get a really good/high ROM, as well as the fact that since its not on a axis & gravity wants to pull it down you really engage grip & core muscles to control it. I've done bent & incline versions of the T Bar DB Row & can highly recommend them!

Is the lying t-bar row machine good? or does it hit a different part of the back?

Rows are going to be your bread and butter. Use all the different varying grips.
Also facepulls really seem to hit the middle back hard but that's not going to be a mass building exercise.
