Crispbreads for a carbophobe?

I am a bit of carb-phobic. I eliminated all starch and grain from my diet and I have never felt better, weight has stabilized for first time in my life, etc etc....(I still eat plenty of carbs from fruit veg beans shakes etc)

But I want to eat things like hummous and protein-spreads like cottage cheese mixed with oiley fish etc...I usually dip crudites into these or fill a halved bell pepper...but feel as though I'm missing out on "sandwiches" or even better, wraps.

I love spinach, and am always trying to eat more egg whites...so I was wondering if anyone fancied a challenge of coming up with a recipe to make something like a crispbread (like a ryvita type thing) I could pile my spreads onto? Maybe spinach leaves, egg whites and flax...baked...or something. Would that work do you think?

Please help :-)

Thanks everyone, I hunted down the flax recipe. Will try it....but I was really hoping someone could have a lightbulb moment with a way to "set" spinach leaves (or something similar) into a hard baked cracker type snack.

I am probably imagining the impossible :-)

Made smoked makeral pate (fish and whipped cottage cheese - who says two wrongs dont make a right??!) and topped with finely diced red onion and would just love to not have to eat it with a spoon or faff about chopping carrots into sticks :-D
