Exclamation Help with a "Daily Calorie Count" ??? - I'm not quite sure what I should do

Dear Bodybuilding Community, I am having a hard time eating the right amount in a day because of the extensive physical demands on my body. I work for a roller skating rink and at times I have had to skate for over 6 hours straight and the following day nothing at all. What often occurs is that I will eat a certain amount, but then eat a whole bunch because of the sudden change in expenditure. (being down -1500 calories in a day - should you do that?)

What should I eat on a daily basis to avoid the sudden spikes of expenditure, but not gain weight in the process?

Height: 5' 2.5"
Weight: 125-127
Goal weight: 115 (w/same bodyfat or a lower bodyfat - yes, that would mean losing some muscle.)
Current Bodyfat: 20-23%
Age: 18
Bodytype: Mesomorph
Bodyshape: Apple (just barely)

Activity:

Lifting 5-7 times a week w/moderate-heavy intensity (~45 min)
Working 3-5 times a week for ~5 hours each, working in the snack bar (therefore not skating but walking around) 2/3 of the time, and skating 1/3 of the time.
Sleep: 9:00 PM or 11:00 PM to 3:00 AM or 6:00 AM

Allergies: Peanuts and some soy. (not allergic to wheat or milk)

Currently: Eating average of 2500 calories a day but that's an average - and I believe that I'm gaining a little.

Your basal metabolic rate is 1398 calories/day. That's the number of calories you burn by just being alive. Based on your activity and goals I'd say multiply it by 1.25. If you started eating more like 1700-1800 calories a day I think you'd start to see positive results.

You should track what you are eating if not already. I use fitday.com and thedailyplate.com, both work really well. see what you eat for a week or so and then adjust it from there. good luck!
