Agreed, I think Steamed broccolli is the best food ever on the healthy list.

2100cals is way too few for any sizable growth, Id suggest at least 3200 cals at a minimum but probably more like 3800 cals.

Add cottage mix with low fat mayo, chedda cheese or something like that.

if you can't handle cottage cheese, just double the veges.
