keep at it, its a long distance race not a sprint.
3 day a week full body program might help as well, splits like you are doing is more of an advanced thing, where you need more recovery time...
Cardio is fine when bulking. Just eat enough to make 100% sure you are above your maintenance calories.
I mix in a little salsa with mine, tastes great.

first see the dr and verify if you have any real damage. Ff there is none and its just weak from neglect, exercise it and lose the weight.
