Simple answer, if you do the exact same thing long enough your body gets used to it and results slow or stop. By changing it up your dont let your body become used to any one movement.

I guess its different for everyone. Nutrition, rest, and schedule have a lot to do with it. I do a three day split and work until failure, never have a problem with overtraining.
