Why do the increased cardio if your concerned you would be at too much of a deficit?

If you want to eat more, do more cardio to increase...

Find the macros on the package and measure them in that state (prior to cooking).

That sounds pretty agressive to lose almost 70lbs in 7 months (assuming you mean Christmas as the holiday), but don't let me imply or state that you can't reach it. Best advice I can give you is read...

This thread just doesn't make sense. 212lb dude with a maintenace of 1800 kcal (IMO, not possible) is getting fat on 2100 kcal a day?

Your margain of error is so slim, it probably won't work. Quite possible you could try it, and end up losing weight if your TDEE fluctuates just a little higher.
