I'd say you're about 15-17% body fat. I agree with the poster above, just intake the same amount of calories your taking now and just lift heavy. About 8-10 reps per set would be good for you.
Dumbells are always better than the smith machine when doing chest, shoulders.
I do 4x6 or 7 and I'm seeing great results in strength wise and appearance wise. Experimenting is the best solution.
