It really depends on the person as to what program works best for you. For example, a person may find that a 5 day split works well for them, while another prefers 3 days on, 1 off, etc.
I think you would benefit from building up your endurance for a while, then increase your volume as you're able to. One or two exercises per muscle group per week is going to be difficult to make...
Hmm...the sleep and rest between seems about right. I would still say it's more of a lack of muscle endurance that's holding you back than anything else.
