I did about 6 Tbs of spice (total!) per lb of meat... I think, depends On how strog f a spice you use- obviously don't use 6 of garlic powder and nothing else, lol. 2 of chili powder, one garlic one...
I found with their spices it's best to use the 1 packet/lb as stated, but I ease off on the cure portions. Or you can add your own spices or a bit of some liquid marinade to adjust for quantities...

For chicken I don't think the marinade will really soak in, you can just toss the stuff in the marinade, makes sure its fully coated, and dehydrate it.
