I think you are over training....you do know that all you need is 3-4 lift days per week right?
Your body grows at rest - with your current workout schedule I don't see how your body can catch up.

Skim does fluff. Not as well as almond milk but if you work it long enough skim fluffs. You don't need whites to fluff. I never use them and I fluff every single day ;)
