I use whole wheat pita pockets, little bit of pizza sauce, 4 oz of beef or chicken, little bit of cheese and bake at 400 for 10 minutes or so. Easily fits into macros.

Your diet looks good however, if you are not trying to bulk or cut...basically your just trying to maintain then I think your are eating too little. Without crunching the numbers based on your weight...
I used to cardio in a fasted state until I began to do more research. There is not any scientific proof that fasted cardio is better for you. Read Alan Aragon's article that snorkelman posted above....
Just eating protein alone will not keep your muscle. You have to continue to lift. Whey protein is an easy way to get your extra protein requirements if you can't get everything from whole food.

I agree with the above poster. At a your "skinny fat" stage I would recommend doing a slight caloric surplus and concentrate on building muscle. If you do it slow you can do it with very minimal fat...
