I put my potatoes in the microwave for 5-6 mins, pre heat the oven to 200-225, oven bake for around 45mins, nice crispy skin, soft and fluffy on the inside.
My personal experience is that it didn't affect my workouts at all, my carbs on some days are roughly 200 and 250+ protein, others 400 carbs 170 protein no difference for me.
