I do over 1000 crunches 5 days a week. Definition only came when I added weighted exercises for abs. I use seated weighted crunches (bending forward driving the weights with my abs).
Notes: In the winter (such as it is here in Southern Arizona), I always start with lighter weights than usual as a way of warming up and preventing injuries.
