There's absolutely nothing wrong with adding an arm day unless you're prioritizing arms over back/legs/chest. I like to do them last in the week after I've already hit the major muscle groups.
Try to stay away from fats PWO (even healthy fats) if you can. You don't want to slow the digestion of foods PWO, so eating some simple carbs + whey shake if perfect for immediately after working...
DOMS doesn't mean anything in terms of muscle growth. If you're workout was intense and you ate good afterwards and up until this point, then you probably did well.
