OP - The folder I found the pics in wasn't the one listed.
Mine were in a folder called chatTemp
try that for anyone else?
Also, I have to use ES File Explorer to change the file type, works better than the stock file folder.

Update and Bump
So my chatTemp folder was useless. The image that WAS in that folder was blank, or maybe I messed it up in the rename process.
But I do not have anything past the Cache folder. Does anyone with an S2 or other phone have an empty Cache folder?
this is what everyone else sees:

but my folder doesn't have the received_image_snaps folder or the other one for that matter. And I only show the Cache folder under the com.snapchat.android folder, none of the others are available.
Yes, Show Hidden folders is on and I have used both the Files and the ES Explorer to search for the said folders.
Troubleshooting - I tried doing looking for it in 3 ways.
1.) When I received a snap but didn't load it
2.) Tapped on the snap to load it but did not open it
3.) Loaded, Opened and viewed snap.

On a jailbroken iPhone 4s.
I was able to navigate through my iOS and found my snapchat folder. Can't find any pics yet, but found 3 old videos that were supposed to be "deleted" after 10 seconds.

For the unawares... Snapchat claims that users can send pics that auto delete after a period of time. Well, they don't delete, the extension is just changed and hidden within android os.
