Dips...decline DB presses...high cable crossovers
As above and low bodyfat %.

Incline press, dumbell or barbell. if you bring up your upper pecs your lower chest will be more defined. most guys hit lower chest enough with flat bench moves. Dips are still a great move and a nothing beats a well balanced chest routine but most guys neglect the upper pecs more than lower.

Dips (try and lean forward as much as poss).
Pec Deck.
Cable cross overs, its all about form, not as much about doing the highest weight possible.
And obviously, lower your bodyfat.
No exercise is going to give you a more defined chest (upper or lower). It's related to body fat.
