I suspect such a school/book/site wouldn't exist. All such equipment is very basic in the grand scheme of things. I'm sure most anybody with basic mechanical aptitude would be able to make such repairs just working from a manual. IMO there's also so much different equipment available, that it seems unlikely to "train" somebody on everything. I would further suspect that the MFG's of the more complex fitness equipment, would staff & train their own employees as installers/repair techs. I have nothing to base this on, so take it for what it's worth. But I personally just don't see a need for such a school/book/site. And if nobody sees a need, it probably doesn't exist.
Regarding the upholstery part of equipment maintanance:

This is for chair upholstery, but the basics are the same. Use vinyl purchased from upholst. shop or joan fabrics etc. Making "piping" for upholstery is harder, I'm looking into that for reupholstering my Roman Chair. You can also buy cheap upholstery patch kits.
I would also advise buying a book on upholstery if interested. I bought mine at value village for 2 dollars. Unlike computers, upholstery doesn't change much over time:)
(But "upholstery" sure is hard to type repeatedly)
