Keto Bread Compilation
I figured this would be a nice place to post some Keto Bread/Bread-Product Recipes people have seen/tried.

possible variations :

- topping it with about 1tbs of oatmeal just before baking won't add much carbs and makes it look even more like real multigrain bread. That's how i got my girlfriend and

- cocoa + artifical sweetner is something definitly possible but i didn't try it.
Those quantities will produce a large loaf. I use a 4x10" mold or so. and it gets 2-3" thick. You have to bake at a high temperature for a good 30 mins. If you use larger

I call this "focaccia" because it is baked in that style -- flat on a sheet pan, and then cut up into whatever sized pieces you want. It works for toast, sandwiches, and other bready uses. It is "rough" in texture like heavy whole grain breads. Since it isn't made with wheat, it doesn't have the same kind of grain as wheat breads, but the carb in flax is almost all fiber. Flax is very useful on a low carb diet, as well as being amazingly good for you.
Prep Time: 15 minutes
Cook Time: 20 minutes
Ingredients:
2 cups flax seed meal
1 Tablespoon baking powder
1 teaspoon salt
1-2 Tablespoons sweetening power from artificial sweetener
5 beaten eggs
1/2 cup water
1/3 cup oil
Preparation:
Preheat oven to 350 F. Prepare pan (a 10X15 pan with sides works best) with oiled parchment paper or a silicone mat.
1) Mix dry ingredients well -- a whisk works well.
2) Add wet to dry, and combine well. Make sure there aren't obvious strings of egg white hanging out in the batter.
3) Let batter set for 2 to 3 minutes to thicken up some (leave it too long and it gets past the point where it's easy to spread.)
4) Pour batter onto pan. Because it's going to tend to mound in the middle, you'll get a more even thickness if you spread it away from the center somewhat, in roughly a rectangle an inch or two from the sides of the pan (you can go all the way to the edge, but it will be thinner).
5) Bake for about 20 minutes, until it springs back when you touch the top and/or is visibly browning even more than flax already is.
6) Cool and cut into whatever size slices you want. You don't need a sharp knife; I usually just cut it with a spatula.[/quote]

Actually, I ended up baking mine for 50 minutes, but I'd check at 40, because my oven seems to take a tad longer to bake.
This is a somewhat eggy-tasting bread, so if you don't care for that kind of taste, this might not be for you.
I was afraid the bread would be dry, because previous experience with coconut flour yielded a very dry product (the OMM, for instance), but this is not the least bit dry, probably due to the large amount of egg and butter. I think that even my dh will like this. It does not taste like coconut.
This sliced into 15 nice, generous slices. Fresh with butter was good, toasted with butter was even better. It's a dense bread. I think this would make a good french toast, or a pnb & jelly sandwich.
Here is what I figured on the nutritional breakdown for the entire loaf:
Calories: 739 divided by 15 equals 49 per slice
Fat: 48 divided by 15 equals 3.2 per slice
Fiber: 54 divided by 15 equals 3.6
Carbs: 66 divided by 15 equals 4.4
Net carbs: Less than 1 per slice
Protein: 61 divided by 15 equals 4 per slice[/quote]

These could easily be made into a bread for a sandwich, but with some Walden Farms Maple Syrup (or your syrup of choice), they are quite amazing as pancakes (or even better, waffles). I always double or triple this recipe for breakfast!!

I'm really wanting to try some keto bread, and these are the recipes I've gathered.
I want to find a new recipe. I figure the possibilities are endless as far as low carb bread goes. Coconut flour, flaxmeal, almond meal, soy flour etc. are all possible bread-making substances. Are there more?
Also, if any of the original recipe makers would like to comment/change their recipes or post suggestions and experiences (and pictures!), please do [I'm talking to you, Eileen :P).

I'm bumping this because I'd like to know about soy flour. I have some left over from my high protein, low fat, fat carb disaster, and I haven't touched it since starting keto - didn't want to consume unnecessary phytoestrogens.

Yeah, before I went to eating carbs, I made a loaf of the first one (Teacher77's). I added a good amount of cinnamon, 4 packets of Splenda, about 2 tsp baking powder, and a little cocoa powder.
I also used a smaller breadpan. 8x4, I think. It was really good and tasted like a raisin bread. It worked for sandwiches and toast (for the 2 days I ate it, this was RIGHT before I went back to carbs). My parents even liked it.

No flax, no almond flour, no Net carbs calculations (for those who have net carb paranoia and stick to an exact carb count).

tried this, pretty happy with the result. Ill post the bread when i have a chance
But i dont have the rectangular pan to make the bread loaf shape, ended up making a giant ass brownie. What kinda pan do you guys use to make bread?

Just made a loaf/slice creation. 1 cup flaxmeal, 2 eggs, 40 ml water, 20 ml coconut oil, 20 ml butter, (can interchange butter with any oil), tiny bit of Stevia, half tbps of baking powder..
Bake until rise at ~200c.
Bit of butter and it's better than bread as a sweet food or savory with breakfast :D
