Different chicken. As we all eat chicken it tends to get old after awhile, so I go back to my roots of growing up in south Florida. Two really good types of chicken breast recipes.
First is Cuban Mojo chicken. Very simple look for a good mojo sauce in a store. Goya makes a good brand and I can even find it up here. Pretty much marinate it for a hour or up to over night. Grill it with some of the sauce that you saved and did not use as a marinade. This you can brush while grilling and it keeps it moist. This is really good the next day.
Jerked chicken is another good choice. Use the following as a rub
2 TBS dried mince onion
2 1/2 Tsp thyme
2 Tsp ground All spice
2 Tsp ground black pepper
1/2 Tsp ground cinnamon
1/2 Tsp cayenne pepper
2 Tbs olive oil
Mix together then spread on meat to be cooked. Let it marinate for about 1 hour for less heat, several for more heat.
Both of these work good on chicken, pork, and beef. The Jamaican Jerk also can work good on salmon, just omit the olive oil and very lightly sprinkle it on fish, a little honey goes nice with it also
