I have "Eating For Life" by Bill Phillips-there are really great recipes in there...my favorite-enchiladas...
1 lb chicken breast 4 green onions (sliced)
2Tbsp cilantro 1 ja;apeno (seeded and minced)
3 cans green ench. sauce 8 corn tortillas
1 c low fat cheddar, shredded 2 c lettuce, shredded
1/2 c ff plain yogurt 1 diced tomato
1 can sliced olives
Preheat oven to 350, boil chicken breasts in water until done, let cool then pull into shreds with two forks, in skillet saute green onion, jalapeno, and cilantro for 2 min., add chicken and 1 can of sauce. Pour other two cans of sauce in bowl and heat in micro until warm. Dip each tortilla in warm sauce, fill with chicken mixture and rooll up. Place in baking dish. Pour left over sauce over the top wtih a little cheese sprinkled on top-heat in oven about 15 min. Put on top of lettuce on each plate and add a dollop of the yogurt and tomatoes and olives.
I made this for my dad (who is totally red meat and potatoes guy) and he kept saying he couldn't believe it was "diet" food ;-)
