Minimum amounts of saturated fat

Would nuts like cashews, pistachios or walnuts combined with legumes like peanuts be a complete protein. Question Why should you keep fat lower than carbs?

I know that keeping fat relatively low helps keep you lean and has been advocated by bodybuilders for decades. But why? What makes fat so apt to making your "gains" mostly fat? Is it because your body doesn't use it as a primary source of energy or what? Just curious.
