Thawing frozen items: how long does expiration extend?

Something i've been wondering... when you freeze foods, does it effectively 'stop' the aging process of the food so that, once thawed, it resumes a normal rate of progression? I imagine it varies some depending on moisture content, etc, but in general is this is the rule of thumb?
