fats on nutrition labels

can anyone explain why on nutrition labels, fats in grams never add up to total amount of fats listed? example fats-16g saturated-2.5g poly-1.5g mono-8.0g trans-0... where are the other 4g coming from??

Should you reset your calories back to 0 for the new day at midnight or just when you wake up? Can you eat after midnight as long as it is in your macros? Or will that after midnight food be counted towards your next day?

Overthinking about macronutrients

Is a 33/33/33 split between macros ok? I'm losing weight atm. I've averaged this over the week. It varies day to day but this is the average over my first week. If it stops working and I stop losing weight will I have to change this?
