Timing doesn't matter... But what about pre/post workout?

Pretty much as the title says. I see everyone saying timing of meals makes a minimal difference in body composition. You could eat your daily calories in one sitting if that worked for you. Is pre/post workout the exception? What's the deal with eating either side of your workout?
