I live in a bottom floor apartment and I'm pretty sure the walls are mostly plaster... but my room is a nice gym with platform/power rack/ etc and I want some wall mirrors to watch my form... any suggestions on how to apply them?
I went to lowes and can find some big ones for around $30-40.

Hooks/Cover the whole back of the mirror with strong double sided tape.

You can purchase a wall mirror mounting kit from Home Depot. Rather than using the screws that come with kit, use plaster screws and anchors. Everything that you need can be purchased there, including sheet mirrors, at very low cost.

You should expect to spend less than $55.00:
$49.00 = 52" X 38" mirror
$03.00 = mounting kit
$00.50 = plaster screws
Here's a picture of mines. Green circle indicate mounting points. Currently, I am using dry erase markers to log previous weeks workout.
