I always liked these during the holidays, and finally took the time to read up on them.
They seem like it would be pretty easy to recreate (the flavors are anise seed and vanilla, not million scoops of sugar or corn syrup or anything) especially since they don't need to rise and can be well thin.
The only thing you need is a pizzelle make, which hopefully Eileen has. Maybe she can make a few thousand and send them out to us.
