Last week ont my my girl friends mentioned that she was going to make stuffed chicken with ricotta and spinach. It sounded so good I decided to make my own. Here it goes (and it's easy):
Boneless Chicken Breasts- I used 6 breasts
Spinach- 1 bag frozen
crushed Garlic bulbs- to taste
Ricotta cheese- 1 tub
Mozarella cheese- depends on how much you like (I used 16 oz.)
Lay out the chicken in a bakeware pan at least 8 x 12
Sautee the garlic in olive or butter, add the bag of frozen spinach. Sautee until soft. Combine the spinach, ricotta and 2 eggs. Salt, pepper, oregano to taste. Top the chicken with the mixture, add shredded mozzarella cheese. Bake at least 30-40 minutes.
