Everywhere I have seen has recommended an oly platform with 2 seperate layers of wood.... would it be ok if I built a platform with just 1 layer of 3/4 inch thick plywood? Of course a horse stall mat would be on top but would 1 layer instead of 2 really make that much of a difference?

If it isn't heavy enough it might move around. That would be bad. If you are going to put the rubber mat completely over the plywood, you might as well just not use the plywood.

no no no i mean just 1 layer below overall except for the middle piece (the one where u will stand) where there would be 2 layers, so basically 1 big piece under, stall mat pieces on the side, and 1 small piece of plywood in the middle

Yeah, I've seen them like that. Should be fine.
