so there's probably a really common sense answer to this question, but here goes anyways:
normally I would run today, but after my legs day yesterday I'm so sore (in a good way) that walking uphill is awful, let alone running or biking
On days like this is it best to:
a) force myself to do the cardio anyways through the pain
b) take the day off and correspondingly reduce calories (ie. I'd usually burn 300 running, so take 300 off my total allowance for the day)
c) take the day off, eat as usual (since my body needs to repair itself apparently) and don't let this situation happen too often

or D. ALWAYS take the day after a good leg day off and eat as usual.
Your body needs to repair itself after every leg day if you want to make any progress. Some cardio might be ok(I wouldn't)~but not if it means you are in pain

I've been taking the day before my legs day off so that I can really really push myself. . . would it be better to take it the day after then? All of my cardio activities (stationary biking intervals and running) are leg intensive. . . and leave me sore the next da, but I enjoy my runs (except on days like this one :) )

I can only tell you what works for me.
I don't do much except yoga, maybe, the day before and the even less the day after. I might go on a long city walk, or tai chi~but that's it. Leg day hurts like hell! I'm not going to do anything to risk the gain after

even better would be total rest on the day before and the day after your leg day.
