Currently I have two rest days per week. I ussually take off the weekends and even though i don't train i remain active. My question is would it be better to break the rest days up throughout the week say like wensday and sunday or is okay to have them back to back like i have them on saturday and sunday. thanks

Taking Saturday and Sunday off is fine. If you were preparing for a contest, I'd adjust it to more of a balanced week.

Should I be taking 2 days off per week? I just started school so I'm getting used to a new schedule, but I was planning on only taking one day off.

Taking one day off is fine. I just decided to take 2 off b/c on the weekends i do yoga and wash cars, swim and do yard work so I am pretty active throughout the weekend and don't need more activity. Also i am just maintaining where i am currently so how many rest days you take is also determined by what your goals are. Just do a plan that works best for you.
