I generally cut it in very small pieces first, taking away all the fat that could be left. I add some herbs and spices, then I either put it in a terracotta dish and bake it in the oven (I sometimes add some liquid like olive oil or wine though not too much to make it less dry) or fry it in a pan with as little fat as possible. (I generally grease the pan with a thin layer of olive oil before using it).
I eat some at once, and put the rest in containers in the fridge with some vegetables or even fruit (try it with some orange chunks it's delicious and not dry at all). As it's cut into small pieces, it's easy to eat whenever you want. just take it out of the fridge and have your meal.
In summer, I might BBQ some too.

I preapre mine in a 'George Foreman Grill', weigh and seperate them by portions in zip locs and store in the fridge. I take them to work, have one with a piece of fruit ( apple or peach ) or cut one up and add it to a small salad and sprinkle with balsamic vinegar.

I buy skinless chicken breasts and season it with salt, pepper, and just a little oregano, then I fry it on the pan with just a teaspoon of butter or margarine. Helps if you have a good frying pan.

Wrap it in bacon, then in velveeta cheese, then jam a stick of butter into it, cover it with a nice beer batter then fry it up in crisco. mmm-mmmmmm

Just kiddin!!- I like to marinate it in water with a pack of "Montreal Chicken Marinade" by Grill Mates and then grill it. Put about 5-6 boneless skinless breasts in a large gallon size ziplock bag and let them marinade in the fridge for a while, then you can cook 'em all up or just a few depending what your needs are. The "Montreal" is really good though. TTT :)

I cut the chicken breast up (raw) into pieces the size of the tip of my pinky. I turn on a frying pan and put some Stir Fry Sauce in the pan, dump the pieces in there, stir them periodically and let them get slightly brown.

Meanwhile, I make a HUGE bowl of Spinach Salad which lasts me about 6 meals (2 days!) with shredded carrots, bean sprouts, artichoke hearts, feta cheese, peas, onion, hard-boiled eggs! Then the chicken goes in when it's cooled. (Green olives are good too, and have no carbs).

I keep it as dry as possible, putting my dressing on only one serving at a time, at the time that I eat it. My dressing is Flax Seed Oil and Ume Plum Vinegar. YUM, YUM, YUM. I don't seem to get tired of this! Highly recommended!

Get one of those new rotiseree ovens and a marinade injector needle. Buy a bunch of chicken in big packages. Get a bunch of freezer bags. Skin the pieces and inject them with a variety of marinades and label the bags according to the marinade flavor. The juicy marinade squirts through the meat as you bite into each piece and you now have a variety of flavors to choose from. All the prep work is done on the weekend with very little work to do during your busy week. Just thaw a bag, pop the chicken in the oven, and set the timer. Try to avoid marinades with lots of spice chunks in them or get a strainer and dump the chunks on the chicken. The chunks clog the injector needle.

I too go with the foreman grill and make a bunch at a time. I get my chicken breast on sale, boneless skinless, make a bunch at a time. Easy and fast. Get creative with the marinades. But cleaning the grill sucks donkey butt!
