How do you achieve good symetry?
Is it mostly genetics or if you perform exercises properly?

It's almost entirely genetic. You cannot shape a muscle - you can only increase or decrease its size. Nature and genetics determines its appearance. You can do quite a lot, however, to even out imbalances in terms of strength and even size, mostly by using unilateral training and identifying imbalances.

let's say when ur doin dumbell curls you can do 30 pounds 10reps fairly with your right hand but with your left hand you struggle to get the last two reps done..how would you even things out so both your hands have equal strenght?

Simple, listen to your weaker side. Only increase the weight when you can do the 10 reps comfortably on the weaker arm.
