Sweet potato pancakes-
6 oz. sweet potato
3 egg whites
1 scoop of protein
tablespoon of nutmeg
1/2 - 1 tablespoon of baking soda (determines thickness)
2 table spoons of cinnamon
Stevia (adds a little sweetness to it.) OPTIONAL
EXTRA:
Add toppings of your choice:
fruit
peanut butter
Cocoa
granola
Sugar free syrup

Ok I'm cooking challenged. I need more direction than that. What do I do with the ingredients? Also are you using flavoured protein powder?

Great Recipe. I ran out to get what I needed to make this.
Instead of using Sweet Potato, I used canned Pumpkin and also used flour (about as much flour as protein powder) and 2% reduced fat milk to bind it together. It turned out AMAZING. Thanks alot dude. Repped
Also, I only used 1 whole egg

Haha i am direction challenged.
1. Microwave the sweet potato as you normally would. Make sure it is pretty soft as you will be mixing it.
2. Once the potato is done, put it in a bowl.
3. Put in three egg whites.
4. 1 scoop of protein (any or no flavor, just adds a little more taste to it)
5. 1/2 - 1 tablespoon of baking soda (for thickness)
6. 1 tablespoon of nutmeg
7. 2 tablespoons of cinnamon
8. OPTIONAL: Stevia for sweetness
9. OPTIONAL: Cocoa for a chocolate flavor.
Once all is in the bowl, mix it up. make sure you mash the potato up, or you will have little chunks of potato (Which really isnt bad IMO)
Cook as you normally would a pancake, I use pam so it doesnt stick to the pan, medium heat, flip when needed. This makes a pretty big pancake, I usually cook 2.
Once they are done, add toppings!!!
Fruit, peanut butter, syrup, whatever you desire!

Sweet potato pancakes-...
I made something like this (in a form of pie, with chocolate chips) the other day: http://recipes.sparkpeople.com/recipe-detail.asp?recipe=2115444 and enjoying it after my work-out with Greek yogurt or cottage cheese. No artificial anything is in there. I also froze several pieces. So no need to mess with pancake cooking every time. ;)
