What I usually do is deviate from the plan a little bit. If I'm scheduled for a rest day and I'm feeling all pumped up and amped, why would I listen to a gameplan that's on a piece of paper that doesn't know how I feel. Same goes both ways, if you are scheduled for legs day for example, and you aren't feeling it, don't go in there and have a shi*** workout. Wait till tomorrow and pound it out.
Just be careful that you don't deviate too much and not get enough rest/not go to the gym enough.

Look yourself in the eyes in the mirror and say "Are you a F##king quitter?"
I usually push through not feeling motivated for that one bodypart and I've had PRs on those days.

Showing up is half the battle, so just tell yourself your stoppin in to buy a smoothie and then head to the iron

The gym and the workout itself is simply there to provide the catalyst for the muscle (re)building process. Get in, do your work, and get out. The actual muscle growth takes place out of the gym. Right now you are addicted, or getting there, to going to the gym. Need to change your mindset so that you believe that you don't need to go everyday, and can actually be counter productive. As long as during your weight workouts you are increasing in weight and/or reps ( probably should have some sort of way of tracking imho), and providing your body with the necessary nutrients ( muscle cant be built out of nothing, and it can't use fat to do it either) you will be on the correct path. However, on your off days you could do some light cardio and some stretching to fill that need of doing something.

There's a couple wheys to look at this.
Some would say (and did) showing up is half the battle. For some that may be very true.
For others, they would say (and did), that if you aren't feeling it, there's no point going in and half assing a workout, when you'd be better off to let your body rest and CRAVE going to the gym the next day so that you'll really pound it out.
I think it all depends on your personality type. Definitely GO to the gym if you're amped up and wanting to lift, you'll prolly set more PR's that whey then just scheduling workouts.
