Ok, let me explain.

I'm currently bulking. Last time I weighted myself I was at 82.3kg (181.4lbs). That was after my judo practise, at 7pm, and I still had like 2000 calories left to eat + I drank around 2 more litres of water before going to bed. I'm guessing I could have been at 84kg or more at the end of the day.

The weight category I compete in is -81kg (178.6). We weigh in the morning. I usually drop like ~1kg over night (2.2lbs).

My question is; how should I adjust my diet in order to fit my category, feel good/strong during the cmpetition and without messing up my bulk?

I have 3 more competitions to go this year, one is next Saturday, another one a month later and the last one is on the 5th of november.

Easy, drink the 2 liters way before bed. Here's what happens with me. When I decide to go to bed at night, I'll take in anywhere from 1 to 1.5 liters of water. I'll wake up maybe once in the early morning to piss and once in the morning when I do have to get up. 2 hours after waking up I end up having to piss yet again and the swing is about 1.5 lb or about .7 kg which is the weight of water I drank at night. The first two times of having to go to the bathroom was water from food or a flushing of water weight. If you sleep at 10 PM, try to get your water in before 7-8 pm. Drink as much as you need after you weigh in.

How much time after weigh do you get? Your best bet is to carb deplete slightly and drink plenty of water a few days before the competition. The night before cut out water completely. Right after weigh in chug down a CHO drink like gatorade. You want something with a 5% CHO concentration (like gatorade or powerade) so that it emtys from the stomach quickly. Then you want to eat something high in GI low in fiber and lower in protein to attempt to replenish most of your glycogen stores. So long as you are not losing more than 5% of your total body weight you should be able to replenish pretty good.
