For the unaware, this is a mom/pop coffee company owned/operated by poison...

Ordered a pound each of the Ethiopian and the Guatemalan as a little birthday surprise for the special lady friend, who's a coffee connoisseur. Order shipped from CA to MA in two days... Contents smell phenomenal, and I could tell by palming the bags that the beans were extremely fresh and still oily.

poison helped through PM and answered a couple of questions for me so I could choose the right beans for her, so I just wanted to draw some attention to the company itself, as well as the customer service.

Have to hold off on brewing the first cup 'til the 23rd, but I'm looking forward to it... Will happily supply reviews of each.

I used to be in a barbershop quartet in Skokie, Illinois. The baritone was this guy named Kip Diskin, big fat guy, I mean, like, orca fat. He was so stressed in the morning...

Aside from quoting one of my favorite movies, this thread is relevant to my interests. Why you no plug your company Poison? I am a big fan of some gourmet coffee.

Wow, this is unexpected, ha. I'm glad you got the coffee OK, smitty....my suggestion is Ethiopia. I'm in love with that stuff. :D

I've been roasting for 8 years now. I apprenticed with a master roaster for 2 years, and have had my own business going for 5 years or so. I don't mention it here because it's not a coffee forum (though coffee IS the original preworkout :D ). But smitty let the cat out of the bag now, I guess. My day job, I'm a bodyguard for Hollywood celebrities, but I dream of beans. You ever see The Rundown, with The Rock? He's sitting in front of a mansion in his pickup, listening to a cooking show on AM radio, taking notes about chantrelle mushrooms or something, then it pans out and becomes apparently he's a bodyguard, sitting outside some rich guys house. That's me, except I'm smaller, poorer, and less handsome. ;) I roast ever batch to order, and send it out by 2 Day USPS. I'm buying beans other roasters won't even think of buying, cost 2-4 times what most roasters use.

I've answered a LOT of questions in the misc about coffee gear. If anyone needs a new machine or grinder, etc, just ask. I don't sell it, but know what's good.

Occasionally. I ran a Starbucks for a few months but I didn't like their reg bean coffees as much as the considerably more expensive reserves.

Their KONA was my favorite but the Columbian Aesopia and the Peru were my cheaper reserve preferences.

They make a blend called Casa Cielo that is in my humble opinion the best coffee Ive ever had.

Our petty differences aside, I'll be placing an order with wcr soon. I'm not big on African blends as they often get too tart and you almost HAVE to have a citrusy accompaniment to pair with it, I'll give the ethiopia a try as well. I find Kenya makes a great iced coffee, but as I said African coffees just aren't my forte.

Wow, nice. That's an interesting operation to run. I wish I had that experience, actually. As far as their reserve stuff, you are right, it is good. I was in a Starbucks a few years back, and looked at the reserve blend; it was $20-something for 12 oz. It was also the exact Costa Rica I had at that exact time, for $16 for a full lb. But mine didn't come in a pretty black Moroccan-looking paper cutout box. ;) Anyway, all my coffees are 'reserve' level, or much, much higher.

Seriously, I guarantee you'll like Kenya once I get my hands on some. It's all in the beans, and roast. Kenyas I buy cost nearly $10/lb green, unroasted, and I simply roast better. My Kenyas sell out fast. I'm just an African coffee whore: Zimbabwe, Ethiopia, Kenya, you name it, I love em. My current Ethiopia just tickles me to death, I freaking love it. I'd buy 5 more bags if I could afford to.

I'm not sure what current market value is on that. The guy I apprenticed with ponied up for a barrel every Christmas, and sold it for $68/lb, iirc. I was never impressed by it, not even close. A $20 Cup of Excellence level coffee from El Salvador, or anywhere, will blow it away. My Kona is $35/lb, and it's sublime: hand grown on 5 acres by a husband and wife, chemical free, shade grown, bird friendly, and outstandingly good. If you guys want some, I can order some.

That is an insane price for KONA. I'd be happy to grab some from you in the future. Even fivebucks had their 1/2lb at $24.50 so with 30% off I was only paying a fee more bucks than that.

Imo the Arokara (getting hints of green bell pepper) and the Indonesian blue java (just overall tasty) were the best purchases I made upon looking back:

I can, and do. I'll go so far as to say I can compete with ANY roaster, anywhere (not surpass, maybe, but play in the same field). If you knew how I do what I do, you'd laugh. I have a ghetto-ass roaster.

BTW, Starbucks has the capability to roast as good as anyone else, they just don't...it's not their business model, which hinges on quantity, not supreme quality. I am 180 degrees the opposite.

That's the stuff! :D One day I'll try em, but I'm not shelling out $150/lb for green poop beans, and the one local cafe that carries them does not have a roast date on the bag. Guatemala (http://www.wcrcompany.com/coffee/guatemala/)
Method: French press
Water: Dasani
Accompaniments: None/black

Deer lord is this smooth... I don't normally drink coffee black (usually add some cream), but I wanted to give this a fair shot and not mask/saturate any flavor. Now, I'm not the kind of coffee drinker that uses words like "pop" or "note" or "bright"; top of the line for me is Dunkin Donuts. While the Guatemalan isn't nearly as strong (caffeine-wise), it's certainly far more flavorful.

There is a very subtle (and almost undetectable to me) fruit-like flavor as it sits on the tongue... It seems very naturally sweet, but not overwhelmingly so.

First experience is extremely pleasant... I can't get over how smooth this is.

Will try the Ethiopia tomorrow and report back.

This thread is immensely relevant to my interests.

Fighting to drink the poor excuse for coffee that the Navy serves us made me invest in a good French press, mini grinder, and a couple lbs of beans for my deployment (mostly Silver Canyon Coffee, pretty good roaster out of CO, my home state.) I really got into coffee and have been to some cuppings around the Norfolk area, but are unfortunately few and far between. Once I get back from deployment and get settled in an apartment I'm looking at acquiring an espresso machine. I'd love to have a La Marzocco machine but the GS3 is too pricey and the Linea is too big..

Awesome to know we've got a coffee culture in the supp misc, and even more awesome poison is a roaster. I love Ethiopian, Kenyan AA, Guatemalan, and Brazilian coffee. Definitely looking forward to trying West Coast's range of coffees. :D

Can you ship to FPO/APO, poison? If not it's cool, might be better to wait until I get back stateside anyways since it takes weeks to get mail.

I started drinking coffee about 6 months ago. I drink ****ty Folgers at work because it's free and Dunkin' Donuts on the weekends. It takes me about 8 weeks to go through a pound at home so I'm looking to splurge. Which coffee tastes best straight? I enjoy Hazelnut more than any other flavor.

I'm going to seek one out after work today. If you have any brand recommendations, I'm all ears... We have a decent one at home, but it's good for only a single cup, so I had to go through the process twice this morning so we could each have some.

You want to go with a coffee providing hazelnut notes, not a hazelnut coffee. Many times that is done with cheap flavoring, which really pulls away from the beans, i.e wawa.

Mine is made by BonJour... it's four cups, nice thick Pyrex glass, easy to clean, and was about $25. You should be able to find them at places like Target, Williams-Sonoma, perhaps Crate and Barrel. I like to go to the little, local cookware places first though... might be a couple bucks more but always good to support small business.

EDIT: I see Illidelphia beat me to it.. Bodum is also a great brand.. probably the most synonymous with coffee presses, but you pay a little more for the name. They make a nifty vacuum pot that I've always wanted too.

Nice! Curious to hear how the ethiopia is. It's my personal favorite.

While La Marzocco's are nice, spending $7k on a home machine is just crazy. I would either choose a Vivaldi dual boiler, or Astra E61 (Pro or Gourmet). We'll talk about it more. :D

I ship to APO's all the time. I'm a member on a SpecOps forum, and they've been VERY good customers, just sent to Kabul last week.

BTW, I donate $.25/lb to the International Medical Corps.

Alot of ethopian coffees will yield a toasted hazelnut flavor. It's delicate though, so if you're looking for a hazelnut coffee creamer flavor, then buy coffeemate.

Bodum is awesome. I love FP, but the problem I have is that they cool really quickly. You can buy the double walled stainless Bodum, but it's like $80 or something. I generally recommend the Bodum travel press:

http://www.amazon.com/gp/product/B000F3NQG2/ref=pd_lpo_k2_dp_sr_2?pf_rd_p=486539851&pf_rd_s=lpo-top-stripe-1&pf_rd_t=201&pf_rd_i=B0002XCIZU&pf_rd_m=ATVPDKIKX0DER&pf_rd_r=0SM86XBN46ATWV3C4JDS

No need to drink out of it, it just works great for brewing hot.

I personally just grind a bit finer than for FP, put the grounds in the cup, pour hot water over, stir, settle, enjoy. No need for an $80 brewing apparatus, and that's how pro's cup anyway.

The clever dripper is a REALLY neat idea. It's a cone filter, with a valve on the bottom. Put the paper filter in, grounds, pour water over, but leave it sitting on the countertop. The valve keeps the water from flowing through, so you get 3-4 minutes of steep time, but opens when you set it on the cup.

The Aeropress is fun too, but not my favorite brew method. Worth checking out if you want a latte-ish drink with lots of milk, as it brews very strong.

Bingo. If you want a flavor in your coffee, like blueberry pumpkin spice :shudder:, buy a flavored creamer, or Torani syrup, and add it yourself after brewing. No one flavors ultra-high quality coffee; why would I, if all you're going to tastes is the flavoring, and not the delicate notes of the bean itself?

A good Guat, or Costa Rican can have pretty strong nuttiness to it, but it always varies.

You like it, huh? :) It's always a gamble: the roast profile I use, and the beans I use, are so vastly different from what most people have ever tasted. You're tasting the flavors of the air and rain and soil where the coffee was grown, instead of the roaster obliterating it all with a crappy roast.

I'm drinking an espresso shot of the Ethiopia now. This batch was a bit light, so it's somewhat tarter than I prefer, but it's amazing how much the fruit comes out in the cup.

Well, I don't really do dark roasts; you'll notice it doesn't have that smokey flavor. Dark roasts are a crutch for most roasters, as they are basically burning the beans, and all you taste are the flavors of the roast. That means they can buy crappy beans, because you're not going to taste the bean anyway, just the roast. I do mostly medium roasts, trying to bring out the inherent qualities of the bean, while developing sweetness.

The IMC is awesome because they don't throw money around; they teach essential skills, like farming, irrigation, birthing, etc to select locals, and help them spread that knowledge to others, so each little bit travels farther. Other programs breed a welfare mentality. The IMC also receives the highest marks for efficiency in charitable organizations.

Honestly, I would definitely step up to the Maestro or Infinity. here's why: cheap burr grinders use plastic seats for the burrs, and construction is not as solid/tolerances are off. This creates different size grind particles, some larger, some dust. When you brew, the large particles under-extract (which doesn't affect flavor negatively), and the dust over-extracts. Over-extraction makes a bitter cup. Most people notice the difference immediately between a cheap burr or blade grinder and a good burr grinder. The Infinity and Maestro are entry level burr grinders that do a great job.

Well considering I had not used a french press in a long time and had a brand new grinder, I used too much water in the french press, but the flavor was still spot on through that. The Ethopia is a coffee that starbucks did wrong for years.

Nate, you did it right. The blueberry accents were spot on, and it lingered long after the last sip. Actually an hour after at the vet (kitty) I had a faint notice of it. The quality speaks for itself. I made my last starbucks purchase. Thank you again.

Wow, I passed! :D Thank you for the kind words! I love this coffee, and I hope it shows in the cup. :)

which type has the blueberry notes? might go with that.

That's the Ethiopia, but keep in mind each coffee is different, each has its own unique flavor, and all great. I don't do less than exceptional. :p

Coffee cup sizes are so wonky. They're based on some 1940's average, when people drank coffee in porcelain cups. The dumb thing is drip machines: 15 cups means more like 6 normal, red-blooded, meat-eating Amderican cups.

And don't get me started on the 'how many teaspoons grounds per cup' nonsense. Listen close: 2 rounded/heaping measuring tablespoons, or 2 average eating teaspoons. But then it depends on how fine you grind; in general, a medium grind is best. A fine 'espresso grind' will extend use, but over-extract and make it bitter; a medium grind will not over-extract or under-extract.

Lulz. Main thing is to be consistent. Use the same scoop/spoon to measure every time, and adjust to taste.

17 people in the office, but only 4-6 of them really drink coffee often. They usually do two pots though through our french press, one in the morning and one around 2:00. We had about 3/4 of a lb left over from another crappy starbucks bag that someone brought in, so it will be harder to see how long this will last us.

And that's good to know on the coffee size. If we can get up to 6 lbs in there, that my cover a month or more.

BTW, the Astra Pro my wife bought me for our 10th anniversary a couple weeks ago ROCKS! It had a faulty vacuum breaker valve, so I took it to the manufacturer yesterday, 20 minutes away, and they had me in and out in no time. It's really well designed: stainless boiler (not copper), stainless heating element, biggest boiler in its class, massive brass grouphead, well-routed wiring, British pipe fittings, massive commercial Sirai pressurestat, etc. Such a beast, and beautiful, too.

French Press is a carafe with a mesh filter that you push down, which separates the grounds and pushes them to the bottom. You just put grounds in the carafe, pour 200 degree water over, stir, let sit 4 minutes, push the filter down, pour and enjoy. Any method where you control water temp is generally superior.

I'm surprised you guys don't have a good coffee setup. My coffee is all over Iraq and Astan. :D

Here's the description for the Honduras:

This coffee is from the San Vincente mill, which buys super small lots from farms that are too small to produce enough coffee to produce their own separate lots. These small farm-holders are known for producing intensely sweet, fruit-forward coffees, and this coffee is exactly that! Sweet rose and guava in the dry aroma, with mild cacao, segue to sweet spice, vanilla, and lots more guava, passion fruit, and ripe strawberry in the cup. Thick body, sweet fruit, and caramel balance out the moderate acidity, which all carry over into a long lasting aftertaste.

It should be up soon. Lane, if you want me to substitute that for one of the coffees you ordered, I'd be happy to. :D

It's impossible to know the caffeine levels of each coffee. It would vary by country, region, year/crop, etc. Stuff like weather patterns, type of coffee plant, rainfall, etc all change caffeine levels. BUT...lighter roasts have more caffeine than dark roasts. I roast mainly medium to light roasts, as dark roasts obliterate the flavors of the beans, so in general, my coffees have the maximum levels of caffeine possible. :D I can say that Yemen is always enough higher in caffeine that it is very noticeable to me.

Thanks, man. Coffee pricing has risen hugely over the last 2 years, a combination of steadily growing global demand, and low crop yields due to disease and weather. I literally pay double what I used to pay 3 years ago for a good Kenya, and Sumatra has nearly doubled as well. Roasters have eaten a large part of the increase, but it's to the point it's impossible. Many switched from 16oz bags to 12oz, some without informing the customer, and without changing pricing; others are just raising pricing.

Moral? Don't be surprised at $20/lb coffee. Just remember, it's still well under $1 a cup for the best brew on the planet. :)

Sipping on some Honduras right now. I'm not that great with describing the flavor of coffee, but it is very good.

The description on the website ends with saying "Thick body, sweet fruit, and caramel balance out the moderate acidity, which all carry over into a long lasting aftertaste." This is accurate, because the taste lingers quite awhile after you have finished. The fruit flavor is much less predominant than in the Ethiopian, but it has a deeper taste that incorporates a larger blend of flavors.

So far of the three I have tried from WCR, I still have Ethiopian as my #1, Honduran #2, and Columbian #3. I have the Sumatra still yet to try.

Excellent, lane. Get the new ethiopia? Let me know how it is, I'm curious.

Yeah I did get it, thanks man. I haven't tried it yet though. I'll do that in the morning.

I'm definitely going to have to step up my coffee game before I order from WCR. After searching the website I apparrently have the wrong bean grinder, my coffee pot sucks and I use tap water.

The web site is really cool and informative and I'll be placing an order when I can get my stuff together to match the quality of the coffee on there.

2 questions....

Does the quality of flavor between drip coffee and french press coffee differ??

Does using the promo code "smitty" get me 10% off?? :p

Not necessarily. Water is easy to fix: buy Crystal Geyser, it has the right proportions of minerals to extract correctly. Grinder: a burr grinder is best, but the main thing is that you grind to brew, which you are doing. No need to buy a wazoo grinder, unless you can spare the cash. Brewer: buy a pack of CleanCaf and run it through your machine (something you guys should be doing every other month or so anyway), and keep using it. I promise you will see a huge improvement just using what you have, with better beans and water. :)

There are "burr" grinders at walmart for less then $15... what gives?

I don't drink much coffee (although I absolutely love it) - but am thinking ahead for a christmas present for my dad... burr grinder and a 1lb of ethiopian from WCR

Thanks for the advice!! Now I need a suggestion for what to order :)

I like the flavor of a breakfast blend but I'm not opposed to something bold....not quite to the extreme of an Italian Roast. I do like shots of espresso though.

Suggestions???

They suck. A burr grinder is supposed to have a better grind quality than a blade grinder. To do this, it must have tight build tolerances, or the burrs wobble, and grind is inconsistent. A $15 grinder has crap grind quality, and will not last near as long as a blade grinder.

Believe me when I say there is NOTHING in between a blade grinder and a $90 capresso or baratza maestro. Those are the cheapest burr grinders that are worth buying. I prefer the maestro, myself, but both are good.

About griind quality: when it's inconsistent, the fine particles over extract and add bitterness, and larger ones under-extract. First order of the day is to grind to brew, everyone should do this, with whatever grinder you can afford. After that, spending the $100 on a burr grinder is a good thing, if possible.

Should be in early next week. It's a very good Ethiopia. Ethiopia has had some issues, the gov't restructured the way coffee is classed and sold, so even though awesome lots are still out there, we may not know where they're from (ie Dara Kebado is a specific place; Yirgacheffe Grade 3, no idea where it's from besides 'Yirgacheffe', which is like saying 'California', instead of 'Rutherford Vineyards'). Anyway, as anonymous as this lot may be in origin, it's VERY good, with lots of fruit and berry to it, which is what I wanted. :)

Ohai! I've seen it in stores, but have yet to recommend it because I haven't used it. It's Bodum, and typically they don't do crap, but still, grinders are tricky. So, have you used a Capresso Infinity or Baratza before?

Poison...I've been watching the qualities of my extractions a lot lately, tying appearance to flavor. I'm noticing when I do certain combinations, soak times, pressure, and repetitions (moving the french press up and down multiple times) that I can come up with a very cloudy coffee. This cloudy coffee is so much more fantastic than other techniques where I yield a dark, but clear, cup.

Any feedback here?

poison
10-07-2011, 08:57 AM
Of course! Cloudy french press is from coffee 'fines', or dust particles; agititating the press stirs them up. These add body to the brew, and flavor. In general fines are bad, as they over-extract, and this is the reason some people prefer filtered coffee to french press, as it's a much 'cleaner' cup. Personally I love the less clean extractions, like french press, or turkish. As long as the coffee isn't sitting around a long time, over-extraction isn't reallly an issue, imo.

This thread was a good read, and I'm ordering from there soon. I use the grinder Illa posted a picture of (cuissionart) and a Kenmore drip coffee pot. I grind to brew and use filtered tap water. Is this "awful"? Would another grinder or a French press make that much of a difference?
Pardon my ignorance.

Not awful at all! If you ever want to see how you're doing, grind coffee a little finer than usual. Put 2 heaping teaspoons in a mug. Boil water on the stove, let cool to 195-200 (measure it with a thermometer), and pour over the grounds in the cup. Stir it, let settle, and drink, the grounds will stay on the bottom. Then you can see if your machine is doing the coffee justice. I don't own a machine, I generally brew as above, if I don't want espresso. It's great!

The new Ethiopia Yirgacheffe just went up!

Ethiopia Yirgacheffe Dry Process
ROAST RATING: CITY

Ethiopia coffee export rules changed not to long ago; all lots are made anonymous when they enter the government warehouse. So, the exact origin of this coffee is unknown (Yirgacheffe produces a lot of coffee). Most Yirgacheffe's are wet-processed, this is dry-processed; the Gedio zone produces most dry-process Yirg's, and that's as close as I can figure. But nevermind: it's superb! Like the Dara Kebado, this is highly fruited, both dry and wet aroma. Lemon wafer, apricot jam, and blueberry abound in the fragrance, and carry over into the cup. Juicy berry, lemon meringue pie, vanilla, mild anise notes, toasted coconut and almond, and raw honey, with nice viscosity when brewed as drip, as well as exquisite as a single origin espresso.

:eek::eek::eek:

I'll be stocking up when I run out of my current stock.

Poison - I've been using filtered water (tried a few brands) for the past few days and something was off. I switched back to our tap water today, and got back the same incredible coffee I'm used to.

I tried the Dara, Columbian, and Sumatran with filtered water.

Have you ever run into a tap water that made a better tasting cup than filtered?

Haha, unusual, but totally possible. Your water may just have to perfect ratio of minerals to brew a great cup.
