I'll look into it next order. They all looked good, you know?

Just saying, I've tried all of them except the Kona I think. My favorite was the original Ethiopian I had Dark Kebado I think, followed by the Honduran, and then the Sumatran. At least so far, but I'm sure I'll try more in the future.

Understood. I have a feeling the Coffee will be sold before we even set up the auction. Illadelphia is already salivating. He just picked up some coffee from the reading terminal market in Phila. I was hoping to convince him to place an order with you once he runs out of the beans he has.

Got the Ethiopia Yirgacheffe Dry Process today. Will be trying it tomorrow. Smells sooo good! Thinking about throwing some beans into my pillow case for a nice soothing aroma while falling asleep :)

For people thinking about buying from here, the shipping to Philadelphia (just outside) was $10 for a pound. It was also $10 for several pounds, so I'd recommend getting several at a time.

I can fit 6lbs in the medium flat rate box. My site doesn't reflect that, only 4lbs per flat rate. If you order 5 or 6lbs, it will charge you $13.95, but I will refund the difference and ship it in the medium box. The flat rate boxes are anywhere in the US. It's $10.20 for 1lb to the east coast, so the flat rate is far more economical.

Anyway, I'm glad you're enjoying the beans, lou!

PS: if you place an even larger order, for xmas, the large flat rate is $13.95, and can fit, oh, a ****load. :D I'd say 10-12lbs or so. I should check.

Well, here's what I usually do:

Sample packs. I roast every batch to order, and my minimum batch size is 1lb, so I never offer 1/2lb samples. But volume is high enough during the holidays that I can piggyback multiple orders together. I'll have a sample pack added to the site, which is usually four 1/2lb bags of different coffees of my choice for ~$45 shipped.

And I always get a very special, exceptional coffee. I used to get Kona in for xmas only, but I can get it year round, and demand is there year round. This year I am looking at a very expensive, exquisite kenya (I get BOMB Kenya's), a Cup of Excellence competition winning offering from S America, or something else. Regardless it'll be something amazing, exclusive, and pricey. Anyone in for Panama Geisha at $160/lb? Hah, didn't think so.

So, I scoped out some uber-exclusive cup of excellence coffees today, for christmas. The cup of excellent is a coffee competition mostly in S. America, but also africa. Farmers can enter their best beans, and a large panel of international judges/coffee cuppers judge them blind, and they are ranked accordingly, then auctioned off. These are the best of the best.

I can get the #1 coffee from Colombia. It's $50/lb....green, unroasted. yeah. It comes vacuum packed in 24kg boxes. I would do it if I thought you all would buy crazy ass expensive coffee like that.

There's also 3 CoE el salvadors: #6, #23, and #3x. These are way more reasonable, and I may do it. There are also CoE Rwandas incoming, but I doubt they'll arrive in time. I want to grab one though in Jan. Yeehaw!

I just ordered some Yemen. I LOVE African coffees (I'll lump Yemen in there, close enough ;) ), and Yemen has always been a favorite. Yemen tends to be wild and crazy stuff: it's grown by families, not plantations. People are extremely poor in Yemen; each family in the coffee growing regions may have 5-10 coffee trees in their backyard. They grow it, pick it, and process it, then lump it together with their neighbors, and take it (many times by donkey) to the local village. They gather it all together, and take it to the nearest town, who gathers all the surrounding villages coffee and takes it to the city, etc. So it's highly un-uniform; you have different altitudes, growing and processing practices, and areas, all affecting the end result in your cup. It is by default organic. I have the joy of having to sort it rather carefully, as all kinds of things make this way into this coffee that's spent time sun-drying on the ground: nails, grains (I get popcorn as I roast, sometimes), rocks, I've even heard of bullets cooking off in the roaster.

Typical flavor profile is deep tobacco (think the smell of fresh tobacco, or unsmoked cigarettes), carob, tanned leather, spice, cranberry, even books. It's complex and awesome! But many times it tastes like, as my coffee broker puts it, 'old goat hides', which is to say funkAy.

This Yemen is not teh funk. It's very balanced, with dense and syrupy, with cacao nibs, sandalwood, allspice and cloves, drenched in concord grape, dried apricot, and mango sweetness. Peaches, chai tea, currants, and potent honey in the very clean, un-'goaty' finish make this a spectacular example of what a good Yemen can offer.

Damn, the Ethiopian is good.
The Sumatran was good too, but doesn't come close to the Ethiopian.
And, I didn't care too much for the Colombian.

These were the 3 I got, and these are my opinions on them. Taste is subjective (example: I don't like cinnamon roll 2.0)

Works great with both Columbian and Sumatran (which I am starting to like more and more).

My coffees are generously flavored, but not like that. :) Specialty coffees generally have very distinct flavors of where they were grown and how they were processed (terroir, in wine-speak). And of course all taste fantastic. Imo, the flavored coffees you speakof exist because for so long coffee was total crap, and something was needed to mask the burnt funk. You might find, with really good coffee, you don't miss it; if you do, try a flavored creamer, or torani syrup and get the best coffee with the flavor you want.

In regards to decaf, I am totally out, and in fact considering taking it off my site. I get very few orders (which is ok by me). That being said, if you want some decaf, I can get some for you, and it is as good as decaf gets.

When you use great, fresh coffee as the base, everything tastes better. An aeropress is great for brewing strong coffee for blended drinks.

when i use my espresso machine, an espresso is roughly 2oz... when i brew an americano in the machine its roughly 5-6oz, but crazy strong

any ideas as to why that is? I add more water but then i have to heat up water and i'm lazy as shiznit :)

Ah, man. If the machine does an americano as a 5-6oz shot, as opposed to a 2oz espresso, you are basically way over-extracting the coffee. The golden rule of espresso is 2oz in 25 seconds, with different coffees and techniques taking liberties from there. But there is no way 5oz through a puck of espresso will taste good. Brew an espresso and boil water.

You can boil a cup of water in a minute in the microwave, or use a countertop kettle, they're fast.

What espresso machine is it, alec?

It really is that good of coffee.

I grab a lb of the Ethopia and Columbia and got them in last friday. I cracked one of the bags open and started a brew...

Couple minutes later I'd drinking the coffee straight from the cup. Between four people, finals and pulling all nighters we've finished a pound since saturday, and we didn't drink any today...

The coffee is delicious. I'll include more about taste tomorrow but I'm getting up early so I'm off to bed.

Simply put, this is easily the best coffee I've tried... I even tried hand pouring the coffee... Good Work poison. I'm impressed.

Ah, man. If the machine does an americano as a 5-6oz shot, as opposed to a 2oz espresso, you are basically way over-extracting the coffee. The golden rule of espresso is 2oz in 25 seconds, with different coffees and techniques taking liberties from there. But there is no way 5oz through a puck of espresso will taste good. Brew an espresso and boil water.

You can boil a cup of water in a minute in the microwave, or use a countertop kettle, they're fast.

What espresso machine is it, alec?

The flavor of the americano is good, and not bitter like I think you are referring to from over-extraction --- its just thats is crazy thick, almost like a cuban coffee. I'm not positive, but I think there are three different sizes of the grind that the machine is able to load into the filter before brewing

I think it's best to stick with the espresso and add hot water...

Yeah man, with finals I figured what the hell. It's worth the money. Didn't have to buy a single energy drink this time, ran out of Focus XT and didn't care. I just did coffee+racetams...

Works great, and surprisingly I never had to add creamer or anything... It was that good lol.

It really is that good of coffee.

I grab a lb of the Ethopia and Columbia and got them in last friday. I cracked one of the bags open and started a brew...

Couple minutes later I'd drinking the coffee straight from the cup. Between four people, finals and pulling all nighters we've finished a pound since saturday, and we didn't drink any today...

The coffee is delicious. I'll include more about taste tomorrow but I'm getting up early so I'm off to bed.

Simply put, this is easily the best coffee I've tried... I even tried hand pouring the coffee... Good Work poison. I'm impressed.

Oh my! Two shots of the CoE El Sal this morning, a cup of drip now.

The shots: it's like a baseball, tightly wound. It hits the tongue with some serious weight, and everything hits at once: it's sweet! It's got acidity! It's thick and viscous! Then everything unravels, and the separate components start to reveal themselves: chocolate, spice, and fruit. It'll take me more than two shots to dial it in, but hhhhnnnngggggg. Amazing range and balance. How'd they fit it all in there?

The drip: well, I'll drinking it now...:D

The drip: I brew it dirty. Put grounds in cup; pour 198 degree water over; stir; let settle; enjoy. It's like French Press, without the involvement of surrender monkeys or pressing. The aroma upon the pour was dry cacao, caramel, and a foresty or herbacious note, very interesting. First sip, piping hot, was all about the chocolate, dark chocolate, chocolate everywhere; as it cooled, caramel notes crept in, along with a sweet acidity which I was too distracted (driving to work) to place, and some floral notes. Again, this a VERY balanced cup, and complex; as drip, the flavors reveal themselves one at a time, unlike when brewed as espresso.

This #34 is a simple outstanding coffee. I wonder what #1 was like?

You didn't grind it fine enough. Grind it finer, and be sure you're using 195-200 degree water (NOT boiling). It should take 3 minutes or so to settle.

The best grown and roasted coffee in the world means nothing if it's not freshly roasted and ground. Definitely make buying a grinder a priority!

Burr grinders are an investment for sure... nothing like the little 20$ twin blade grinders.

I only recommend 2: capresso infinity or baratza maestro (or whichever baratza you wish, actually). Baratza is a far better company than capresso, and I like their grinders better.

Due to my insane schedule Ive been becoming more accustomed to stims and find coffee preferable for smooth energy to stim products and the taste has even grown on me... if this trend keeps up I will be buying a sampler pack in the very near future!

Most coffee is ruined long before the creamer hits it. I have people ask me if it's OK to add creamer to my coffee; well, duh! If it tastes good to you, that's how you should drink it! Milk, persay, does not ruin a good cup of joe. :)

I am reserving the last 26kg of the Burundi Prestige Cup #19 right now. :D The Prestige Cup was last years trial run for this years first-ever Cup of Excellence competition in Burundi. So, this coffee was judged by a panel of international judges, and placed 19th. I've never had a Burundi, so it should be great fun!

Rwanda Coko Cooperative -

This cooperative has their own processing facility, using S. American methods, which results in a very high quality cup that highlights the best flavors Rwanda is capable of, in spades. Floral and citrus in the aroma carry over at first sip, with notes of melon, clove, and light cacao flavors. Body is medium but silky smooth, and darker roasts bring out a Bing cherry sweetness. I picked up some great Rwanda's last year; this year is looking even better!

Any thoughts on what they are advertising as the "Blonde roast"? For the most part I think Starbuck's beans are nastily roasted, but you can smell it through the bag vent. I picked up a pack of this stuff in the store and I get nothing at all from the vent, scentwise.

So I am putting up a new store, using bigcommerce. Pretty awesome. I thought i'd be more awesomer, and transfer my domain name from godaddy to bigcommerce, just to streamline things. Transfer initiated. 10 days later nothing. Godaddy assures me its good to go. Bigcommerce says godaddy isn't completing the transaction on their end. Many minutes spent listening to elevator music on hold. Anger levels rise. Bigcommerce agrees to call godaddy themselves. They say it will be two more days. 3 days later I call to see why it did not go through. The bigcommerce lady says "wait, why are you transferring from godaddy to us anyway?"

:headassplode:

She explained that I should stay with godaddy because they offer a private mode, unlike bigcommerce, which will save me hassles and spam. She cancels the transfer request.

Godaddy wins.

I roasted samples of a microlot Brazil Recreio today. I'm working night shift, so I brought some with me and brewed it up. Man, it's super-clean, caramel and toasted almond, milk chocolate, and a beautiful floral acidity to balance it out. If I'm not mistaken, Recreio has won 1st place in the Cup of Excellence, and placed highly again this year. I'm not sure if this is the exact CoE coffee, but it's from the same Fazenda and crop.

I've been drinking the Burundi Prestige Cup as drip; it's pretty robust, with juicy berry and winey flavors, but there was a wild herbacious note I couldn't corner. It hit me yesterday morning: Ricola drops. It's really cool!

Two new coffees on the way: Ethiopia Illubabor Baaroo, and Java Kopi Sunda. Ohh, yeah.

we're looking at a fairly heavy, silky body, for an Ethiopia. Dark chocolate notes (chocolate ganache), graham cracker, ginger, and apricot preserves are dominant.

Java: brown sugar, baked apple, cinnamon, and tangy tamarind, all wrapped up in a creamy, caramelly heavy body

These sound HEAVENLY!!

Honestly, the issue with FP is temp: they tend to cool quickly, so you get lukewarm joe. If it's just for you, I highly recommend this double walled travel FP:

Glad you like it, brother! The Java is the darkest roast I do, it's robust enough that some acidity still shines through even at that roast level. I may lighten it a bit, as I dial it in more, but I think that roast level works great too.

No man, just no. Keurigs suck. They brew cold, and you either have to use stale ass k cups, or buy the reusable deal, which can be a hassle. Buy a clever dripper for $15, and a grinder for $30-90, and enjoy world class coffee.

The cheapest acceptable burr grinder is the Capresso Infinity, from Bed Bath & Beyond. If you can find a 20% of coupon from them (which are everywhere), it's like $75 or so. I prefer Baratza Maestro's, but they're around $120.

I'll be working 5am-2pm at my new job thurs-mon(I'll also probably pick up more shifts, so looking at 50-60hrs a week), and it's all technical stuff so I'm going to be drinking a good amount I'd assume.

I haven't considered expresso...

Just give me some options and I'll see.

Right now I'm at like 2-3 scoops of FXT a day man, so I'd like to have some coffee or espresso...

I got around $150 amazon credit from books that I can throw to the cause so yeah..

Perfect. So, the main components of good coffee are good coffee; a good grinder, grinding before brewing; properly heated, good water; and a way to brew it.

Coffee: uh, we know where to get that. :D Basically, good beans, well roasted, and used within 3 weeks of roasting.

Water: clean, with a balanced mineral content. Distilled water sucks, because it has 0 minerals in it, and tastes weird/does not extract well. Crystal Geyser is actually a reliable source of pretty tasty, balanced water. Fiji is good. If you live where water is really hard, or soft, you gotta use bottled water, a Britta isn't going to cut it. If you want a mind-****:

Water must be at the proper temp to brew good coffee. For drip, FP, etc, 195-200 is ideal. Most people either use drip machines, which tend to brew cool across the board; or they boil water, and pour immediately over the coffee. Both are terrible. If you are heating water on the stove, buy one of these (or something similar):

Grinder: Whole beans keep fresh for 3-4 weeks, no more. The ideal window is days 3-12 out of the roaster. Ground coffee? It's stale within 2 days, and almost everyone can taste the difference after day 3. So keep it as whole bean and grind immediately before brewing. Either buy a $30 blade grinder:

Dirty method - put a medium fine grind in the cup. Pour 200 degree water over it. Stir. Let it sit 3-4 minutes, settle, and enjoy! You literally need no special equipment to do this, and it's like a FP, but with more flavor and body. Tastes great, it's my chosen method for drip.

FP - you control temp, and brew time, so it's all good. I hate the cleanup, but if you like it, do it.

Pourover/Melitta cone - If you prefer sediment-free, filtered coffee, a melitta cone is $5, and filters are dirt cheap. You control brew temp, but not brew time, as water flow right through. A great, cheap way to go.

Abid Clever dripper - This is a pourover cone, with a trick borrowed from the FP: it has a valve at the bottom. This fixes the issue with the Melitta cone, which is the lack of brew time due to the water flowing right through. With the Clever, you pour water in the cone, let it sit 3-4 minutes, then set it on your cup, which opens the valve and lets the water flow through. Highly recommended.

My thought is this,

I'll be drinking a ton of coffee, so I would love the dirty brew method for once school starts and I won't be drinking cup after cup. So I'm looking at the 10-cup brew from your previous post.

However, I also want it to be relatively quick as my breaks are like 5-10mins long so that is what makes espressos so attractive..

Every house in japan has one, for tea. But...some have coffee temps as well. I have two, which I used to brew pourover cone coffee at a local farmers market. They are awesome. Fill it up, and it takes 10-15 minutes to come to temp, and it keeps it there all day long. Walk up, grind your coffee, dump in the cup, pour already-hot water over, and go back to work. Doesn't get much easier.

I'm almost positive that with judicious application of artificial flavorings I can totally obliterate the flavors of origin and terroir, which the farmers slaved over so diligently to cultivate. If all else fails, I'll toss the beans with Torani syrup.
